What is Essenhaus? In 1971 Das Dutchman Essenhaus opened as an Amish-style restaurant in Middlebury, Indiana and is now the largest family-owned restaurant in the state. In addition to the restaurant, the campus is also home to a bakery, Inn & Conference Center, Heritage Hall, and several unique gift shops. Amish Noodles - how they're made Our Amish Egg Noodles are prepared the same way Grandma made them. We mix flour, eggs, and water into a rich dough; then we roll it into a sheet. The sheet is cut, dried, and packaged. This process creates a superior noodle when compared to extruded brands.
