Union Jack rings all of the bells of an aggressively hopped West Coast IPA, but with an astonishing balance that stands out from the crowd. The name Union Jack is a nod to the colonial origins of the IPA style, and to the British expatriate who co‐founded the Firestone brewery. This originator of Firestone's "Jack" IPA family is double dry‐hopped to create bold grapefruit, tangerine and other citrus flavors, all contrasted by pale malt sweetness to rein in the intensity. Metcalf and Kendall varieties of Munich, Cara Pils, and Simpson's Light Crystal two-row malts create the beer's backbone. Magnum hops are used for bittering, while Cascade and Centennial hops are added to the late kettle. Dry Amarillo, Cascade, Centennial, Citra, Chinook, and Simcoe hops give it a bold nose. The result is a tribute to-and a twist on-the IPA style that put the West Coast on the craft beer map.
